Jujube processing method

Jujube is rich in nutrients and high in sugar content. It can be eaten fresh or processed into candied dates, smoked dates, wine dates, date mud, date vinegar, and date cakes. The processing method of jujube is introduced as follows:

First, no nuclear sugar dates

Non-nuclear candied dates are a popular tonic food. It is fresh in color, bright purple, rich aroma, soft and hard, delicious, sugar content of more than 70%, vitamin A content is also higher, with lungs, spleen, kidney, qi, blood and other functions. Its processing method is as follows:

1, the choice of material to the core: the use of meat thick, thin, small nuclear, high sugar content of red dates; date body is complete, uniform size, no insects, no mildew, fully mature, fully dried. After the selection, remove the date kernel with a helium nucleus machine and remove the nucleus. When manually taking the core, use a knife to remove it from the two ends of the screw.

2, soaking and cooking: The red dates of the core are soaked in hot water of 65-75°C, and gently stirred. After the jujube sucks enough water, remove and drain the water. Then add 50 kg of hot water at 90-95°C, add 30 kg of white sugar, stir while adding sugar, dissolve sugar, add 3% of citric acid, boil for about 30 minutes, boil the dates into purple. , can be poured together into a clean container with sugar, soak for about 25 hours, until the jujube skin is full of syrup, become dark purple so far.

3, baked products: first drain the surface of the syrup in hot water, and then into the baking tray into the oven to bake, so that the moisture content is reduced to about 15%, the oven temperature starts at 50 °C, over 6-7 hours Rise to 70-80 °C and other dates can be wrinkled, remove the packaging when you feel the hard internal soft.

Second, red dates mud

1. Pure jujube paste: Choose no insect bite, no rotten red dates, rinse into casserole or stainless steel pot, add water to drizzling dates, cover with stir and boil, then use low heat for 1 hour to make red dates cooked through. After the fish is removed, it is smashed into a mud with a wooden shovel, packed in a gauze bag, squeezed and filtered, so that the date core and the date skin are left in the bag, and the pure date mud is filtered out.

2, bean sand jujube: Using the above method, red beans and red dates together into the pot to cook can also simply boiled red bean paste into bean paste, then mixed with red dates mud.

3, sesame jujube: first make a date mud, take the equivalent of one-fifth or one-tenth of the weight of sesame seeds, washed with water, dried, fried yellow, crushed, mixed with the jujube. In addition to sesame seeds, walnut cultivars and chestnut kernels can be used to make different dates.

4. Fruit scented jujube: Add fruit essence in the prepared jujube paste, that is, the results of the scented jujube.

Three, jujube vinegar

Good quality dates can be processed into goods for sale in time or stored after drying. And picking the leftover dates can be used to process date vinegar, reducing losses and increasing economic benefits. Jujube vinegar is delicious and the processing method is simple. The specific operation method is as follows:

1, into the cylinder treatment: Wash the miscellaneous jujube to the miscellaneous, soaked in water for 24 hours, and then crushed or crushed. Every 10-15 kilograms of jujube, add 1 kg of Daqu and 3-5 times of the equivalent weight of jujube, then add 10% of the cane sugar and 5% of the yeast liquid to the jujube, mix well and put it into the jar. Cylinder mouth to leave 15-20 cm gap, the top with a paper paste, stamped, compacted, sealed fermentation.

2, acetic acid fermentation: sealed into the tank 4-6 days, you can complete the fermentation, and then remove the lid removed, do not retain the sticky paper, then put in the sun exposure. When the temperature reached 34°C, acetic acid bacteria rapidly propagated and the fermentation process was completed within 10-15 days.

3, product filtering: After continuous fermentation, pour out the filter, you get a light yellow new vinegar. Add 2 kilograms of salt per 100 kilograms of fresh vinegar, add a small amount of pepper water, and store it for two months. In addition, jujube, jujube, and persimmon are used as raw materials and can be processed using the above method, and can also be made into jujube vinegar or persimmon vinegar.
