Abstract: This paper firstly describes the centrifuge in detail according to the operating principle of the centrifuge. Then, through the brewing process of the centrifuge in the wine, the process of the centrifuge in the winemaking is described in detail. The application in the process has a guiding role.

The working principle of the centrifuge is two kinds of centrifugal sedimentation and centrifugal filtration. The centrifugal filtration is a centrifugal pressure generated by the suspension under a centrifugal force field, and is applied to the filter medium, so that the filtered filtrate passes through the medium to become a filtrate, and is larger. The particles are trapped on the surface of the medium by the filter medium to achieve effective separation between the solid and the liquid. The centrifugal sedimentation means that the suspensions of different densities are quickly settled in the centrifugal force field, so that the solid and the liquid are effectively separated, generally in a centrifuge. The cylinder whose axis rotates is driven at high speed by the drive of a motor, which is called a drum.
Second, the centrifuge classification (a) according to the separation factor Kc size, the separator can be divided into a constant speed centrifuge (Kc < 3000), high-speed centrifuge (Kc = 3000-5000), ultra-high speed centrifuge (Kc> 5000) In wine production, for the clarification of grape juice and the pre-clarification of wine, a centrifuge with a separation factor of 5000-8000 is generally used. For the wine before bottling, a centrifuge with a separation factor of 1400-15000 is generally used.

The separable solid particles have a minimum diameter of 0.5 μm; while horizontal centrifuges are rarely used in domestic wine production, and are mostly used in sewage treatment enterprises to handle a maximum solids content of up to 60%.

Let's take the vertical disc centrifuge as an example to briefly introduce the operating principle of the centrifuge: there is a self-cleaning disc type drum in the centrifuge, the drum is used for liquid purification or solid collection, due to the difference in density between solid and liquid, and By the action of centrifugal force, the solid is separated from the liquid, and the drum is shown in Fig. 1. The material slowly enters the drum from the water seal inlet 1. In the separator, the material is accelerated to the drum speed and into the disc group 4. The disc group is composed of a plurality of conical discs, one by one. The narrow gap separates the liquid into a thin layer, which minimizes the pad distance. The purified liquid flows to the center of the drum and enters the centripetal The pump chamber is pressurized by the centripetal pump 3 and discharged from the drum. The separated solids are periodically discharged from the solid discharge port 7 at the bottom of the drum. The self-control system works by sensing the solid material level in the liquid sensing drum, and a small portion of the sensing liquid flows into the branch through the separation disc 5, passes through the induction liquid pump 15 to the flow switch 16, and then flows back to the feed port, if the separation disc The sensing liquid at the sheet 5 is blocked by the accumulation of solids in the solids collection zone 6, and the proximity switch on the flow switch 16 will send a pulse signal to the control unit 17, causing slagging. The diameter of the separation disc 5 must be adapted to the specific application. For example, if the separation disc is too large, the self-control pulse signal will be sent too early, and the solid collection area is not filled. If the separation disc is too small, the solid collection area will be The overflow causes the purification process to be degraded. The material is separated from the surrounding environment by an additional immersion disc (special version) in the centripetal pump 3. The material chamber is sealed by the induction liquid pump 15 on the main centripetal pump. The centrifuge adopts frequency conversion speed regulation, which can adjust the speed according to different process requirements. According to different materials, it is convenient to select multi-speed operation. At the same time, the frequency conversion control system is used to realize the soft start of the drive device, so that the impact on the power grid is reduced, and the inverter has Overvoltage overload and overcurrent function, when the motor or running load is abnormal, the inverter will quickly stop the output and block the output due to the fault, thus achieving the function of protecting the motor in time.

The changing barrel process is generally carried out simultaneously with the centrifugal treatment.
